organic cupcake recipe for Bella 

Ash's Organic Cupcakes

As seen in Bella Mag, Ash and Rocky (the chook) team up to make cupcakes using her own organic backyard eggs.

INGREDIENTS

Remember to choose the organic & Aussie made brands :)
115g softened butter
115g Rapadura sugar (or raw sugar)
2 organic backyard eggs, lightly beaten
90g Self Raising Flour
2 Tablespoons raw Cacao powder (or cocoa)

METHOD

1. Preheat the oven to 190.  Line 2 x 12 hole muffin tins with cup cake paper cases.
2. Place the butter and sugar in a large bowl and beat together until light and fluffy, then gradually beat in the eggs.
3. Sift in the flour and fold into the mixture.
4. Spoon mixture into the paper cases.  Bake in the preheated oven for 15-20 minutes.  Transfer to a wire rack to cool completely before icing.

ICING INGREDIENTS

200g pure icing sugar, sifted
1 tablespoon of softened butter
1 tablespoon of raw cacao (or cocoa)
about 2 tablespoons hot water

ICING METHOD

Sift icing sugar and cacao into a bowl, spoon in the butter and mix in just enough hot water to mix to a smooth paste that is thick enough to coat the back of a wooden spoon.  Spread over cooled cup cakes and decorate as you like!
